I got a Dell PowerEdge T110, their cheapest tower server, for a 64-bit test server, and I've been impressed so far. It comes with a server-class Xeon processor, and ESXi 4.0 installed without a hitch. When I tried to create a 64-bit virtual machine on it, it said it could not, so I rebooted and went into the BIOS. VT was disabled, so I enabled it, restarted, ESXi 4.0 came up without a problem and I was able to successfully set up Windows Server 2008 64-bit version.

Because this is a test server, I got it with 8 gigs of RAM and the default hard drive -- 250 GB SATA. The cost of the system was only $650.

Caveat: Depending on how I entered Dell's website, this system could either end up in the $600 range or the $900 range. If you are ordering the system from Dell.com, and it comes out in the $900 range, you can clear your cookies, go back in through a different link, and you'll get the lower price.

I can also confirm that the installation of VMware ESXi 4.0 works with the Dell Power Edge T110 straight out of the box. Just go into system BIOS and tell it to boot from DVD drive. Installation was straightforward, everything was recognized.
I have the same specs as twallace, but my price was $560 for the system. I used Dell's instant savings coupon (~$400) and looked online for more Dell coupons (found another $100 savings coupon) to save some more cash.
Note that I used a monitor, keyboard and mouse I already owned.
